Creamy Chicken Noodle Soup
This steaming hot soup is the ultimate comfort food on a cold day. Creamy chicken noodle soup stirs up nostalgic memories of childhood... When it was a go-to remedy for colds.
It's the perfect combination of creamy broth, tender chicken, and soft noodles!
Simple Ingredients
- 2 tablespoons butter
- 3 stalks celery, chopped
- 3 large carrots, chipped
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- ¼ teaspoon oregano, crushed
- 6 cups chicken broth, bone broth, or chicken stalk
- 2 large chicken breasts, cooked and shredded
- 2 bay leaves
- 2 cups heavy cream
- 3 cups of uncooked egg noodles
- Salt & Pepper to taste.
Choosing Chicken Stock or Chicken Broth
You can use either chicken stock or chicken broth in this chicken noodle soup. But they are different and will make your soup taste a little different.
- Stock: Deeper flavor, thicker consistency, often used for a stronger base. If you want a richer, more flavorful base for your soup or stew, opt for chicken stock.
- Broth: Lighter flavor, thinner consistency, often used for a more subtle base. If you prefer a lighter, more delicate flavor that allows other ingredients to shine, choose chicken broth.
How to make creamy chicken noodle soup:
In a Dutch oven or large pot, sauté the onions, garlic, thyme and oregano for 5 minutes over medium-heat till soft and aromatic.
Add celery and carrots and sauté for another 5 minutes.
To the pot add chicken broth, two bay leaves, and shredded chicken. Simmer gently over medium-low heat for 15 minutes till carrots are soft are the flavors meld together.
Finally add the cream and dry egg noodles. Simmer soup gently over medium-low heat for 10 more minutes... Just until the noodles are soft.
Don't be afraid to taste your soup frequently! This will help you season it to your liking. Add salt, pepper, or more herbs to your taste.
Serve warm with a sprig of thyme leaves, and soft yeast rolls or soft sourdough rolls!
