First, you must rinse the rice three times in cold water before it ever touches the heat… Rinsing washes away excess surface starches, which is the main culprit behind sticky, gummy rice.
Second, we don’t just boil the grains. Instead, we melt a couple of tablespoons of rich butter in the saucepan, toss in a few cloves of minced fresh garlic, and sauté the raw jasmine rice first. Zest Before You Juice: This is a classic kitchen rule of thumb… Always run your fresh limes over a microplane or grater to get that beautiful zest before you cut them in half and squeeze out the juice. Trying to zest a squishy, fully squeezed lime is almost impossible and a quick way to skin your fingers! 😉
Strictly No Peeking! Once you turn the heat down to low and put the lid on the rice pot, leave it alone. It’s tempting to lift the lid to check on things, but that lets out trapped steam. That steam is what cooks the rice evenly; losing it means you’ll end up with undercooked rice. Keep that lid in place during the simmer and during the 10-minute resting period after you turn off the burner. 😉
Fold the Herbs in Last: Fresh cilantro is delicate. If you throw it into the pot while the rice is boiling or hot, it will wilt, turn a dull brown color, and lose its bright flavor. Ingredients
- 1 ½ cups long-grain white jasmine rice
- 2 tbsp butter or use coconiut oil!
- 2-3 cloves garlic minced
- 2 ¼ cups chicken broth veggie broth, or water
- 2 fresh limes zested and juiced
- ½ cup fresh cilantro finely chopped
Instructions
- Rinse the Rice: Place the jasmine rice into a fine-mesh strainer and rinse thoroughly under cold running water three times to wash away excess surface starch. Drain well and set aside.
- Sauté the Garlic: Melt the butter in a medium saucepan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.
- Toast the Rice: Add the rinsed and drained rice to the pan with the garlic butter. Stir constantly for 2–3 minutes, lightly frying the grains until they are just slightly toasted and golden brown.
- Bring to a Simmer: Pour in the chicken broth (or water) and stir gently. Bring the liquid to a boil.
- Cover and Cook (No Peeking!): Once boiling, immediately turn the heat down to low, pop the lid on the pot, and leave it alone. Let it simmer for 15–20 minutes. Pro-Tip: Strictly no peeking! Keep that lid firmly in place so the trapped steam cooks the rice evenly.
- Rest: Remove the pot from the heat but do not remove the lid. Let the rice sit and steam undisturbed for 10 minutes.
- Dress and Fluff: While the rice rests, run your fresh limes over a microplane to get the zest, then slice and juice them (always zest before you juice!).
