How to Make Crockpot Ribs with Pineapple
Cut your rack of baby back ribs in half if they don't fit in your crockpot, and set it aside. Optionally you can add the dry rub seasoning to the ribs for extra flavor.... The dry rub recipe is on the recipe card, so you can just print it!
In your Crockpot whisk together the bbq sauce, coconut aminos, brown sugar, onion powder and salt. Add your pineapple rings, green onions, and ribs, and turn it to coat the ribs in all that saucy flavor.
Place the lid on top of your crockpot, and the crockpot temperature to high, and let it cook for 6-7 hours. If you cook on low it will take 8-10 hours;)
Use tongs to gently remove your ribs and pineapple rings from the crockpot to a cutting board.
*Optional - Pour the remaining sauce into a small sauce pan, with 1 tablespoon cornstarch, and whisk over medium low heat to till it thickens.
Garnish your ribs and pineapple with the sauce, and fresh chopped green onions... And serve hot with a side of creamy mashed potatoes and roasted asparagus or a delicious strawberry salad!
If You Have Leftovers
If you are lucky enough to have any leftovers.... Let them cool completely and then transfer them to an airtight container. You can refrigerate ribs for up to 3-4 days, or freeze for up to 3 months.
When reheating refrigerated leftovers, use the oven at 350°F (175°C) for 15-20 minutes or gently warm them on the stovetop;)
For frozen leftovers, thaw them in the refrigerator overnight before reheating using the same methods. Remember to avoid overheating to prevent dryness and add a little liquid like broth or sauce if needed. Garnish with fresh herbs or barbecue sauce for a flavorful finish.... And enjoy!
