To make the best peach cobbler, start with fresh, ripe peaches. Peel, pit, and slice the peaches, placing them in a large bowl. The juicy peaches will be the star of the show in this dessert.

Prepare the Peach Filling: In a separate bowl, combine the sliced peaches with brown sugar, lemon juice, and a touch of lemon zest. The lemon adds a hint of brightness to the sweet peaches, creating a perfect balance of flavors. Toss the peaches gently to coat them with the mixture, allowing the peach juices to meld together.
