Peach season is here and I love preserving these juicy treats with this easy peach canning recipe... I use the Ball Compete Book of Canning, and a few tips from veteran canners!
Improved Peach Caning Recipe
Canning peaches is so much easier then canning chicken or beef or bottles of pot pie filling... But now it's even easier with a few tips!
Thanks to a few veteran canners with over 40 years of canning under their belts, I've learned a few methods to make canning peaches even easier!
The first is to add the sugar directly to jars, instead of making a syrup... The sugar dissolves on it's own in the jars after a month or two on the shelf!, And it's so much easier, because You don't have to mess with the sticky syrup! It saves you a huge step.
The second tip is during the blanching process. I always thought you needed to put hot peaches into ice water to get the skins to peel off... Not so! Just fill your sink with COLD water... No ice needed! This saves a huge mess of ice, and the skins peel off just fine!
Peach Canning Ingredients & Equipment
- A half bushel of peaches, or about 20 pounds.
- 12 quart jars
- 24 teaspoons of bottled lemon juice - 2 teaspoons in each jar to preserve color. Peaches are acidic enough on their own to can without lemon juice. The lemon juice is to preserve color;)
- Optional - 3 cups granulated sugar, ¼ cup in each jar for light syrup.
Canning Equipment
- Water bath canner & Lid
- Jar lifter
- Funnel to fill jars.
- Clean wash cloth.
- Clean large mouth mason Jars, new lids, and clean rings.
How to Can Peaches
First wash and blanch peaches... Then peel the skins off. Blanching peaches just makes it easier to peel them;) You can use a peeler if you prefer.
Slice peaches in half and remove the seed.
Add sugar and lemon juice to the bottom of each jar.
To can peaches in halves, place peach halves facing down inside jars. Stack halves on top of each other, and to the sides of each other. Fit as many peach halves as you can into the jar (all facing down.)
Fill the jars the rest of the way with clean water, leaving ½ inch headspace at the top of each jar.
Use your knife or plastic de-bubbler to move the peaches around in the jar and remove any air bubbles.
Wipe the rims clean with a damp towel.
Place clean new lids on top of each jar... And screw on bands to finger tight!
Place jars into your water bath canner, fill with water to 1-2 inches above the jar lids.
Adjust the temperature to high and bring it to a boil. Crack the canner lid so steam can escape and prevent it from boiling over.
Process quart jars for 30 minutes! Make sure jars stay covered by at least 1 inch of boiling water the entire time. Add water as needed.
When done, turn canner off, and let it cool for 10 minutes.
Remove hot jars carefully using a jar lifter. Place them on a clean towel on the counter and let them cool for 24 hours.
THEN, check the seals, remove the bands, and store for up to 2 years!

Notes
- Ripe Peaches: Choose peaches that are slightly soft to the touch. This ensures they're sweet and juicy.
- Blanching Time: Adjust the blanching time based on peach size and firmness. Larger, harder peaches may need a slightly longer blanch.
- Peeling Alternatives: If peeling is difficult, consider using a vegetable peeler or even a paring knife for a quick and efficient process.
- Sugar and Lemon Juice: Experiment with different sugar-to-lemon ratios to find your preferred sweetness and acidity.
- Headspace: Maintain a consistent headspace of ½ inch to prevent the jars from sealing incorrectly.
- Water Bath Canner: Ensure your water bath canner is large enough to accommodate your jars without crowding.
- Boiling Water: Make sure the jars are submerged in at least 1 inch of boiling water throughout the processing time.
- Cooling: Allow the jars to cool undisturbed for 24 hours to ensure proper sealing.
- Testing Seals: To test seals, press down on the center of the lid. If it doesn't give, the jar is sealed.
- Storing: Store canned peaches in a cool, dark place for up to a year.
