The Best Way To Cook London Broil

There are many ways you could cook a London broil. London Broil is a lean cut of beef that can sometimes be tough, but when cooked correctly, it’s incredibly flavorful and tender! This simple method combines pan-searing for a delicious crust with baking for even cooking, ensuring juicy results every time.

Recipe Tips

Bring to Room Temperature: Allow the London Broil to sit at room temperature for about 30 minutes before cooking. This helps ensure more even cooking throughout the steak!
Adjust Seasonings: Feel free to adjust the seasonings to your liking. Rosemary adds a classic savory touch. Thyme works beautifully with beef and complements the garlic.
Resting is Key: Resting the cooked steak is crucial for allowing the juices to redistribute throughout the meat. This results in a more tender and flavorful slice.
Leftovers: If you have any leftover London Broil, it’ wonderful in sandwiches, salads, or wraps the next day!

Best London Broil Seasoning

I love to use Montreal Steak Seasoning…. But if you don’t have that on hand, this combination is delicious on a London broil steak! I use course ground salt and pepper, and I highly recommend it! Course ground salt and course ground black pepper make a big difference! Here’s why:

Flavor Release

  • Salt: Coarse salt, like kosher salt, tends to dissolve more slowly than fine table salt. This slower dissolution can create a more gradual and sustained flavor release as the meat cooks.
  • Pepper: Coarsely ground black pepper retains more of its essential oils, which contribute significantly to its aroma and flavor. These oils are more easily released when the peppercorns are cracked or coarsely ground.

Texture & Crust

  • Salt: Coarse salt can help to create a slightly crispier crust on the meat during searing, as it may dehydrate the surface slightly faster.
  • Pepper: The larger peppercorns can add a bit more textural interest to the finished dish.

More Control

  • Coarse grains are easier to see and distribute evenly, giving you more control over how much seasoning you’re applying.

Get That Delicious Crust!

Searing the London Broil develops a flavorful and truly satisfying crust. Here’s why:

Sealing in Juices: While the degree to which searing actually “seals in juices” is debated, it does create a flavorful barrier that helps to retain moisture within the meat as it cooks.
Maillard Reaction: Searing the steak over high heat triggers the Maillard reaction, a chemical process that creates hundreds of new flavor compounds. This reaction occurs when the proteins and sugars in the meat’s surface caramelize, resulting in a rich, nutty, and intensely flavorful crust.
Enhanced Texture: The high heat of searing also creates a slight caramelization on the surface of the meat, resulting in a crispy and slightly chewy texture that contrasts beautifully with the tender interior.
