We grow a ton of berries so I’ve been making this recipe for over 15 years now, and I’m excited to share it with you! When berry season is in full swing, there is nothing quite like a warm, bubbling fruit crisp fresh out of the oven. This super simple Easy Berry Crisp takes only 10 minutes of hands-on prep time and relies on a foolproof ratio: 1 cup each of four basic pantry staples for the golden, buttery oat topping.
Whether you are using fresh hand-picked blackberries and raspberries from the garden or a bag of frozen mixed berries, this rustic dessert delivers the perfect balance of tart fruit and sweet, crunchy topping.

- Granulated Sugar: Sweetens the topping. If your berries are especially tart, you can toss a couple of tablespoons directly into the fruit mixture as well.
- Cold Unsalted Butter: Cut into small cubes so it breaks down easily into coarse crumbs when blended or cut in.
- Optional Warm Spices: A dash of fine sea salt and 1/2 teaspoon of ground cinnamon bring out the natural sweetness of the berries.

How To Make Mixed Berry Crisp
Prep the Berry Filling: Preheat your oven to 350°F (175°C) and position your baking rack in the center. Lightly grease a 9×13-inch or 7×11-inch baking dish.
Rinse fresh berries gently under cool water and pat dry. Transfer the berries to a large mixing bowl, sprinkle with 2 tablespoons of all-purpose flour (plus optional sugar if preferred), and toss gently until lightly coated. Pour the dusted berries evenly into your prepared baking dish.
Next, Pour dusted berries into a 7×11 or 13×9 baking dish.
Make The Crisp Topping
In a mixing bowl (or using a stand mixer with the whisk attachment), combine the cold cubed butter, flour, quick oats, sugar, cinnamon, and salt. Mix on low speed for 1 to 2 minutes until the butter breaks down into small, pea-sized crumbs that cling together.

Assemble & Bake: Scatter the crumble topping evenly over the berries, ensuring coverage all the way to the edges of the dish.
Bake at 350°F for 55 to 60 minutes for fresh berries (or 70 to 75 minutes if using frozen berries) until the oat topping is deep golden brown and the berry juices are bubbling around the sides.

Crisp Topping
- 1 cup butter unsalted, cold and cubed
- 1 cup flour all purpose
- 1 cup quick oats
- 1 cup sugar
- 1/2 tsp cinnamon ground (optional)
- 1/4 tsp salt fine (optional)
Instructions
- Prep: Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Coat Fruit: Place berries in a large bowl. Sprinkle with 2 tablespoons flour (and optional sugar). Toss gently to coat, then transfer to the baking dish.
- Make Crisp Topping: In a bowl or mixer, combine cold cubed butter, 1 cup flour, quick oats, sugar, cinnamon, and salt. Mix until coarse, crumbly dough forms.
- Assemble: Evenly scatter the oat crumble over the berry layer, reaching all the way to the edges.
