These pumpkin cupcakes are super moist, and delicious! They're perfectly spiced and topped with fluffy cream cheese frosting and candied maple pecan pieces. It's an easy 1 bowl recipe that my whole family loves. (And I have some picky kids!) Makes 30 cupcakes.
I'm whipping these beauties up this November for my Dixies baby shower that I'm hosting because they match her pumpkin theme.
Pumpkin Cupcake Ingredients
- 4 eggs
- ⅔ cups milk (I like to use condensed milk)
- 1 cup avocado oil (or your favorite oil)
- 1 - 16 ounce can on pumpkin puree
- 3 cups of granulated sugar
- 3.5 cups of unbleached flour
- 2 teaspoons baking soda
- 1.5 teaspoons salt
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon ground cloves
- ¼ teaspoon ground ginger
Cream Cheese Frosting Ingredients
- 8 cups powdered sugar
- 1 cup salted sweet cream butter
- 2 - 8 ounce packages of cream cheese
- 2 tablespoons vanilla
- 1 cup chopped pecans
- 2 tablespoons real maple syrup
Beat cream cheese and butter, add vanilla, then beat in powdered sugar 1 cup at a time till all incorporated!
How To Make Homemade Pumpkin Cupcakes
In a large mixing bowl or stand mixer add all ingredients and blend with a stand mixer or hand mixer for 2 minutes till well incorporated.
Line cupcake pans with cupcake liners, and fill them each with a heaping ¼ cup of batter.
Bake in a 350 degree preheated oven for 18 minutes or till a toothpick inserted into the centers comes out clean.
Remove cupcakes from pan, and put them on a cooling rack.
Let cupcakes cool completely.
Make frosting, and frost cooled cupcakes!
In a nonstick skillet add 1 cup chopped pecans, and add 2 tablespoons pure maple syrup.
Cook over medium heat till pecans become coated and syrup candies around them (5-10 minutes max).
Remove pecans from the pan and let them cool.
Sprinkle candied maple pecans over cupcakes!

Notes
Make sure your butter and cream cheese for frosting are at room temperature or softened in the mictrowave just till soft (about 15-20 seconds.) Butter and Cream cheese will be clumpy if they are not soft before blending them.
Cook cupcakes JUST till a toothpick inserted in the middle comes out with only a crump on it. Do not overcook cupcakes.
