Simple Ingredients, Big Flavor

You don’t need any fancy culinary skills or a long list of obscure items to make an incredible homemade meal. This recipe relies on everyday, wholesome staples—like aromatic onions, garlic, fresh celery, carrots, and simple pantry items—that work together to build incredible, cozy depth of flavor.

If you’re new to making soup, don’t worry: everything happens right in one pot. A quick tip for success: Chop and dice all your vegetables before you turn on the stove—since soups move quickly once you start sautéing, having your ingredients prepped and ready makes the whole process completely stress-free. Taking just a few minutes to sauté your aromatics and let the flour cook out creates a velvety, restaurant-quality broth effortlessly.

How to Customize Your Soup

One of the best things about homemade soup is how easy it is to adapt to what you have on hand…

Feel free to swap out the veggies based on your garden harvest or fridge staples—tossing in a handful of baby spinach or chopped kale right at the end with the cream adds a pop of color and extra nutrition. If you want an even richer, deeper broth, you can easily substitute the water and chicken bouillon for rich, homemade chicken bone broth!

What to Serve with Creamy Chicken Gnocchi Soup

While this 30-minute soup is hearty and satisfying enough to stand completely on its own as a main course for a quick weeknight dinner, you can easily round it out with some wonderful companions:

Fresh Sourdough Bread: A warm, crusty loaf of homemade sourdough bread is perfect for soaking up every last bit of that velvety, creamy broth.

A Crisp Green Salad: Balance the richness of the cream and pillowy gnocchi with a refreshing green salad tossed in a light vinaigrette.

Hearty Mains: If you are feeding a hungry crew or hosting a larger family gathering, pairing this soup alongside a savory main like a slow-cooked Tender Rump Roast creates an unforgettable, multi-course feast.

Epic Soup Flights & Favorites: If you’re hosting a cozy autumn soup night, building a comforting spread with other reader-favorite soups—like a rich Loaded Broccoli Cheddar Soup or a savory Zuppa Toscana Soup—gives everyone delicious options to choose from!

Equipment

  • 1 big soup pot

Ingredients

  • 3 chicken breasts diced
  • 1 medium yellow onion diced
  • 4 large cloves garlic minced
  • 3 tablespoons butter
  • 2 –3 stalks celery minced
  • ⅓ cup all-purpose flour
  • 1 tablespoon chicken bouillon
  • 3 cups water
  • 3 carrots chopped
  • 1 package dried gnocchi
  • ¾ cup heavy cream
  • Fresh chopped herbs for serving

Instructions

  • Sauté Aromatics: Melt the butter in a large pot or Dutch oven over medium heat. Add the diced yellow onion and minced garlic, sautéing until soft and translucent.
  • Add Celery & Chicken: Add the minced celery and cook for a few more minutes. Add the diced chicken breasts and sauté together until the chicken is partially cooked through.
  • Coat with Flour: Sprinkle the flour and chicken bouillon directly into the pot, stirring well to coat all the ingredients. Cook for a couple of minutes to remove the raw flour taste.
  • Simmer Soup Base: Pour in the 3 cups of water and stir continuously for a few minutes until the liquid begins to thicken up slightly.
  • Add Vegetables & Gnocchi: Add the chopped carrots and the package of dried gnocchi to the pot. Let everything simmer until the carrots and gnocchi are tender and softened.
  • Finish & Serve: Reduce heat to low, stir in the heavy cream until heated through, and serve hot topped with fresh chopped herbs.

Notes

Gnocchi Doneness: Store-bought potato gnocchi cooks quickly. They are generally done as soon as they float to the surface. Avoid overcooking them so they retain a nice, tender-chewy texture.
Make-Ahead & Leftovers: Gnocchi will continue to absorb liquid as the soup sits. If you are planning for leftovers, the soup will thicken up considerably in the fridge. When reheating, simply stir in an extra splash of water or broth to thin it back out to your preferred consistency.
Cooking the Flour (Roux step): Letting the flour cook for a couple of minutes with the butter and chicken is a crucial step. It cooks out the raw flour taste and ensures a smooth, velvety soup base.
Cream Tip: Heavy cream adds a rich, stable finish that holds up well to simmering. If you want to substitute half-and-half for a slightly lighter option, add it gently over medium-low heat to prevent any separation.
Optional Greens: While your soup is fantastic as-is, you can easily fold in a handful of fresh baby spinach or chopped kale at the very end with the cream until just wilted for extra color and nutrition.
