Simple Ingredients
- 6 cups chopped fresh baby spinach
- 3 tablespoons minced red onion
- ¼ cup chopped cheddar cheese
- 2 tablespoons sun flower seeds
- ⅓ cup dry cranberries
For The Dressing:
- ½ cup mayo
- 2 tablespoons seasoned rice vinegar
- 1 tablespoon brown sugar
- ¼ teaspoon ground black pepper
How to Make Chopped Spinach Cranberry Salad
This easy salad recipe takes just a few minutes to put together!
First chop your baby spinach on a cutting board and place it in a salad bowl.
Mince your onions. I like to mince mine small so my little kids don't really notice them, but they're beautiful and taste delicious, so chop them to your preference. place it in the bowl with the chopped spinach.
Chop cheddar cheese into ¼ inch cubes, and place it in the bowl with the spinach.
Sprinkle the sesame seeds and dry cranberries over the top, and then get a small bowl out to make the dressing.
For the dressing: add the mayo, pepper, vinegar and brown sugar to a small bowl, and whisk till smooth and all combined!
Toss the salad, then drizzle with a few tablespoons of the dressing, and toss again to coat!
Store the remaining dressing in the fridge for your next spinach or broccoli salad!
