Eggs: The protein-packed base that holds everything together. Whisking them thoroughly gives you a light, fluffy egg muffin without needing any milk or heavy cream.
Turkey Sausage: My go-to for keeping these muffins high in lean protein while keeping the overall fat content lower so they aren’t greasy… You couldswap this out for breakfast pork sausage, diced ham, or ground turkey seasoned with sage and black pepper.
Red Bell Pepper: Adds a mild, sweet crunch, but I specifically chose red bell pepper for that gorgeous pop of bright color against the golden eggs!
Yellow Onion: Sautéed yellow onion brings a rich flavor adding savory sweetness!

Sharp Cheddar Cheese: Provides a rich, melty flavor and helps bind the muffins together. Mixing half into the batter and sprinkling the rest on top gives you those delicious crispy cheese edges! You could swap sharp cheddar out for pepper Jack for a spicy kick, or Sharp White Cheddar / Swiss for a savory twist…. And if you’re dairy free, just use a plant-based chedar shred, or omit the cheese… The mixture holds together well without it.

Why no milk or cream?
Skipping liquid dairy keeps the muffins dense enough to hold all the hearty sausage, bacon, and veggies without getting watery or spongy in the center.
Can I make these in paper muffin liners?
I strongly recommend greasing your muffin tin directly with butter or non-stick cooking spray, or using re-usable silicone liners instead! Egg mixtures love to stick to paper muffin liners, leaving half your delicious egg muffin glued to the paper when you peel it off. Silicone liners or a well-greased tin allow them to slide out clean and easy every time.
Why did my egg muffins deflate after baking?
Don’t worry—that is completely normal! As the eggs bake, trapped steam and air pockets cause them to puff up nice and tall in the oven. As they cool on the counter, that steam escapes, causing them to settle back down slightly. It won’t affect their fluffy texture or flavor one bit!

Easy Breakfast Egg Muffins (High Protein)

- 2 silicone muffin tins
Ingredients
- 12 large eggs
- 1 lb turkey sausage cooked and crumbled
- 1/3 cup bacon crumbles divided
- 1/3 cup red bell pepper finely minced and sautéed
- 1 small yellow onion finely minced and sautéed
- 1/3 cup fresh cilantro finely minced (divided)
- 1 cup sharp cheddar cheese shredded (divided)
- 1/2 tsp salt or to taste
- 1/4 tsp black pepper
Instructions
- Prep the Oven & Pan: Preheat your oven to 350°F (175°C). Generously grease two 12-cup muffin tins with cooking spray or butter to prevent sticking.
- Sauté the Veggies & Meat: Cook the turkey sausage in a skillet until fully browned; drain any excess grease. In the same skillet, sauté the minced onion and red bell pepper for 3–4 minutes until soft. Let cool slightly.
- Whisk the Eggs: In a large bowl, whisk the 12 eggs thoroughly with the salt and black pepper until completely smooth and lightly foamy.
- Mix in the Fillings: Fold the cooked turkey sausage, sautéed onions and peppers, half of the bacon crumbles, half of the fresh cilantro, and half (1/2 cup) of the shredded cheddar cheese directly into the egg mixture.
- Fill the Muffin Cups: Evenly divide the egg mixture into the 24 prepared muffin cups (about 3/4 full).
- Top and Bake: Sprinkle the remaining 1/2 cup of cheddar cheese, reserved bacon crumbles, and reserved cilantro over the tops of the muffin cups.
- Bake: Bake at 350°F for 18–22 minutes, or until the eggs are set in the center and slightly golden on top.
- Cool and Serve: Allow the muffins to rest in the pan for 5 minutes before using a butter knife to gently loosen the edges. Serve warm!
