There’s nothing like a warm, bubbly strawberry cobbler to capture summer’s essence! If you grow strawberries, you’ll love this simple recipe. While it’s perfect with strawberries, it’s also wonderful as blackberry cobbler. No matter the berry, pair it with a generous scoop of cold, creamy vanilla ice cream melting into every warm bite!
Key Ingredients
Fresh Strawberries: These are the heart of your cobbler! Choose ripe, vibrant red berries for the best flavor. While you can use frozen strawberries, fresh ones will give you a brighter, more intense strawberry flavor. If using frozen, don’t thaw them first – just add them directly to the dish, and be prepared to add about 10 minutes to your baking time. 😉
All-Purpose Flour: This forms the base of our delicious cobbler topping, giving it that classic cake-like texture.
Sugar: Provides sweetness to both the fruit and the topping. Feel free to adjust slightly to your preference or the sweetness of your strawberries.
Baking Powder: This is our leavening agent, creating a light and fluffy topping that’s perfectly risen.
Salt: A small but mighty ingredient! Salt enhances all the other flavors in the cobbler, bringing out the sweetness of the berries and the richness of the butter. Don’t skip it!
Milk: Adds moisture to the cobbler topping, helping to create that soft, tender crumb.
Melted Butter: The secret to a rich, golden-brown, and incredibly flavorful topping. Melting it lets you stir it seamlessly into the batter.
My Tips for Cobbler Perfection
- Don’t Overmix the Batter: When combining your wet and dry ingredients for the topping, mix just until the dry ingredients are incorporated. (Because overmixing can lead to a tough cobbler.) A few small lumps are perfectly fine! 😉
- Trust the Golden Brown: Bake until the topping is beautifully golden brown and the edges are bubbly. This indicates that the cobbler is cooked through and the fruit is tender.
- Cooling Time is Key: While it’s tempting to dive right in, let your cobbler cool on a wire rack for 10 minutes allows! This lets it set slightly and it’s easier to serve, but still warm and delicious with a scoop of vanilla ice cream melting on top!

Simple Strawberry Cobbler – Perfect for Any Occasion!
Ingredients
- 8 cups strawberries you can also use frozen but up the baking time about 10 minutes.
- 1 1/2 cup all purpose flour (or 187.5 grams of fresh ground einkorn flour)
- 1 1/2 cup sugar granulated
- 1.5 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cup milk
- 3/4 cup butter melted
Instructions
- Get Your Oven Ready: Start by setting your oven to 350 degrees Fahrenheit (F). This allows it to heat up while you prepare the ingredients.
- Prepare the Strawberries: Take your fresh strawberries and wash them gently. Once clean, spread them out evenly in the bottom of a 7×11 inch baking dish. You don't need to grease or butter the dish!
- Mix the Dry Ingredients: In a medium-sized mixing bowl, combine the sugar, all-purpose flour, baking powder, and salt. Use a whisk to mix these dry ingredients together thoroughly until they're well combined.
- Add the Wet Ingredients to the Batter: Now, pour the milk and melted butter into the bowl with your dry ingredients. Whisk everything together just until all the dry ingredients are wet and combined. It's important not to overmix; a few small lumps are perfectly fine!
- Pour Batter Over Berries: Carefully pour the batter you just made evenly over the strawberries in your baking dish.
- Bake to Perfection: Gently place your baking dish into the preheated 350-degree F oven. Let it bake for 60 minutes. You'll know it's ready when the top is a beautiful golden brown and the fruit juices are bubbling around the sides.
- Cool and Serve: Once baked, carefully remove the cobbler from the oven. Place the dish on a wire rack and let it cool for about 10 minutes. This cooling time helps it set up nicely. Then, spoon out generous servings while it's still warm, and top with a scoop of vanilla ice cream or a big dollop of whipped cream!
