This is a super easy recipe to prep ahead… I serve this sweet potato casserole every thanksgiving with Oven roasted turkey, grandmas stuffing, easy green bean casserole, rick pumpkin pie, and maple pecan pie!

Simple Ingredients

This recipe makes 8 servings… Double it for a crowd! You’ll need about 20 minutes of prep time and an hour and 20 minutes of cook time.

  • 6 LARGE sweet potatoes
  • 1/2 cup unsalted butter, melted
  • 1/2 cup packed brown sugar
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 3 cups marshmallows, (tip: mini marshmallows spread out better over sweet potatoes.)

How to Make Sweet Potato Casserole with Marshmallows

Prepare Sweet Potatoes: Preheat your oven to 400°F (200°C). Scrub the sweet potatoes clean and pierce them a few times with a fork. put your sweet potatoes right on the oven rack. And bake them for about 50-60 minutes… Until they’re tender when pierced with a fork.

Make Your Sweet Potato Filling: Let the baked sweet potatoes cool till they’re easy to handle… But don’t let them cool all the way, or they’re harder to mash.

Cut your cooked sweet potatoes in half, and scoop out the flesh into a large bowl.

use a fork or potato masher to mash the sweet potatoes until they’re a nice smooth texture.

Add the melted butter, brown sugar, real maple syrup, vanilla extract, and salt to the mashed sweet potatoes.

Use a rubber spatula to mix all the ingredients together till they’re combined.

If you are prepping this ahead of time, don’t add the marshmallows till right before baking!

Assemble the Sweet Potato Casserole: Place sweet potato mixture into a 9×13 or 7×11 baking dish. Top generously with marshmallows.
