Key Ingredients

  • Baking Powder: The wings are tossed in baking powder and allowed to sit, drying out the skin and setting the stage for maximum crispiness. Baking powder acts as a leavening agent, causing the skin of the wings to puff up slightly as they bake. This creates that incredible crispy texture you’d expect from deep-fried wings, but without the mess or extra fat. The oven’s heat dries out the skin further, as the baking powder helps it puff up, for incredibly crispy buffalo chicken wings!
  • Flour: The flour provides a coating for the seasonings to adhere to and helps create a crispy crust. The seasoned flour mixture creates a protective layer that helps the wings cook evenly and prevents them from drying out.
  • Seasonings: A blend of salt, pepper, garlic powder, onion powder, cayenne pepper, and paprika adds depth of flavor.
  • Hot Sauce: The foundation of Buffalo wings! Choose your favorite brand for the desired level of heat. The hot sauce and butter are combined to create a flavorful glaze that coats the wings. Melted butter adds richness and helps the hot sauce cling to the wings.

This combination of ingredients and the baking process results in Buffalo chicken wings that are crispy on the outside, juicy on the inside, and bursting with flavor.

Why not just flour?

Flour alone will coat the wings, but it won’t provide the same level of crispiness. Baking powder takes it to the next level, ensuring you get those perfectly golden-brown, satisfyingly crunchy wings.

What to Serve with Your Buffalo Wings

I like to serve Buffalo Chicken Wings with a salad like: broccoli bacon salad, a sweet strawberry salad, loaded potato salad or crunchy apple salad. For heartier sides, baked beans or a fresh loaf of sourdough bread are excellent.
