Based on my go-to blend I’ve used for years, this recipe combines softened butter with a perfect mix of rosemary, thyme, garlic, and savory seasoning. It’s the essential flavor booster for your main dish, but don’t forget the sides – turkey stuffing is just as important!

It takes less than five minutes to mix up, and the reward is a roast that tastes incredible from the inside out. Stop relying on plain oil—this is the easy secret weapon you need for a juicy, unforgettable holiday bird!

Tips & Tricks for the Perfect Turkey Butter

Using this herb butter is simple, but a few small steps can make a huge difference in your final roast:

Use Softened Butter: This is non-negotiable! If your butter is too cold, it will tear the skin when you try to apply it. If you forget to set it out, cut it into small cubes and let it sit for 15 minutes, or use the microwave on 10% power in 15-second bursts until soft.

Salt is Essential: I use a full 4 teaspoons of kosher salt because this amount needs to season the butter and the entire turkey. Don’t worry, the turkey is massive, and this seasoning ratio is necessary to carry the flavor into the meat and ensure the skin crisps up beautifully.

Go Under the Skin: For a professional-level roast, you must get your butter under the skin and directly onto the breast meat. This is what keeps the meat moist and ensures the flavor is truly baked in. Use your fingers to gently separate the skin from the breast meat before slathering the butter.

Ingredients

  • 3 teaspoons dried thyme
  • 1 1/2 teaspoon black pepper
  • 2 teaspoon garlic powder
  • 2 teaspoon onion powder

Instructions

  • Soften the Butter: Ensure the butter is fully softened to room temperature. This is crucial for easy mixing and blending.
  • Combine Ingredients: In a medium bowl, add the softened butter, kosher salt, dried thyme, garlic powder, onion powder, black pepper, and chopped fresh rosemary.
  • Mix Thoroughly: Use a rubber spatula or a hand mixer to blend all the ingredients until they are perfectly incorporated and the mixture is uniform in color. Scrape down the sides of the bowl as needed.
  • Prepare for Application: The butter is now ready to use! You can apply it immediately to your turkey, or you can wrap it tightly and refrigerate it (see Notes for storage).

Notes

Butter Temperature: This butter works best when applied when it’s soft. If you mix it ahead of time and refrigerate it, pull it out about 1 hour before you plan to use it.
Best Application: For the crispiest skin, gently loosen the skin over the turkey breasts with your hands. Rub about half of the butter under the skin and the other half generously all over the exterior.
Storage: The herb butter can be made up to 1 week ahead of time. Store it tightly wrapped in plastic in the refrigerator.
