Tips & Tricks for the Perfect Turkey Butter
Using this herb butter is simple, but a few small steps can make a huge difference in your final roast:
Use Softened Butter: This is non-negotiable! If your butter is too cold, it will tear the skin when you try to apply it. If you forget to set it out, cut it into small cubes and let it sit for 15 minutes, or use the microwave on 10% power in 15-second bursts until soft.
Salt is Essential: I use a full 4 teaspoons of kosher salt because this amount needs to season the butter and the entire turkey. Don’t worry, the turkey is massive, and this seasoning ratio is necessary to carry the flavor into the meat and ensure the skin crisps up beautifully.
Fresh vs. Dried Herbs: While this recipe uses dried thyme for convenience, I highly recommend using freshly chopped rosemary. Fresh herbs release more fragrant oils, adding a complexity that dried herbs simply can’t match.

Application Strategy
Go Under the Skin: For a professional-level roast, you must get your butter under the skin and directly onto the breast meat. This is what keeps the meat moist and ensures the flavor is truly baked in. Use your fingers to gently separate the skin from the breast meat before slathering the butter.

Ingredients
- 1 1/2 cubes butter 12 tablespoons unsalted butter, softened
- 3 teaspoons chopped fresh rosemary or 1 teaspoon dried
- 4 teaspoons kosher salt (if you are using salted butter, only use 2 teaspoons.)
- 3 teaspoons dried thyme
- 1 1/2 teaspoon black pepper
- 2 teaspoon garlic powder
- 2 teaspoon onion powder
Instructions
- Soften the Butter: Ensure the butter is fully softened to room temperature. This is crucial for easy mixing and blending.
- Combine Ingredients: In a medium bowl, add the softened butter, kosher salt, dried thyme, garlic powder, onion powder, black pepper, and chopped fresh rosemary.
- Mix Thoroughly: Use a rubber spatula or a hand mixer to blend all the ingredients until they are perfectly incorporated and the mixture is uniform in color. Scrape down the sides of the bowl as needed.
