- Discard the paper towels and use a fresh one to pat the pork chops dry again. Continue blotting until the surface of the pork chops is completely dry.
- You can now proceed with cooking the pork chops according to the recipe.
Cook Time
The cooking time for bone-in pork chops in a skillet depends on the thickness of the chops. For 1 inch pork chops in the recipe:
- Heat a skillet over medium-high heat and add a tablespoon of oil.
- Season the pork chops with salt and pepper on both sides.
- When the oil is hot, add the pork chops to the skillet and sear them for 2-3 minutes on each side until they are nicely browned.

Heat a large oven-safe skillet over medium-high heat and add the olive oil.
