These saucy, oven-baked Country Style Ribs are the most incredible comfort food, and they’re so easy to make right in your oven.

With a savory homemade rub and a tender, fall-apart texture, they have so much flavor you’d never guess how simple they are. This dish is a guaranteed hit at any potluck, and it’s the perfect way to get that incredible barbecue flavor, no matter the weather.

Country Style Pork Ribs vs. Ribs

Country-style ribs aren’t actually ribs at all! They’re a boneless cut from the shoulder of the pork, which is the same meat used for pulled pork. Because they come from this pork butt roast part of the pig, they’re meatier and more affordable than beef or baby back ribs. They also have great fat marbling, which is the key to keeping them moist and delicious during the slow-and-low baking process. You get so much more for your buck!

Key Ingredients & Prep

You really only need three key ingredients for these incredible boneless ribs. You’ll need about 3 pounds of country-style pork ribs, and while you can use bone-in or boneless, I find the boneless version is the easiest for a weeknight meal. You’ll also need a delicious dry rub (you can find my recipe below) and your favorite barbecue sauce.

To get started, make sure you pat your ribs dry and coat them liberally with the rub. You want to make sure every side is covered for the best flavor. Since these “ribs” have plenty of fat that melts as they cook, you don’t need to grease or butter your baking dish—it’s one less thing to worry about!

Best Seasonings for Country Rib Rub

These seasonings combine to make the best dry rub for ribs…. The smoked paprika give them a subtle smokey flavor, red pepper flakes give a bit of heat, garlic and onion for flavor and a bit of brown sugar for sweetness… You can’t go wring with this stuff! My dry rub includes: chili powder, dark brown sugar, smoked paprika, cumin, garlic powder, onion powder, salt, crushed red pepper flakes, and black pepper!

After seasoning, place ribs in a single layer on your foil lined baking dish. If using a baking sheet, make sure you’ve got some good side rims to hold juices.

The Secret to Tender Ribs: Low & Slow!

The reason some people end up with tough country-style ribs is because they try to cook them too fast. The secret to getting a truly fall-apart tender texture is to cook them low and slow. While it may seem like a long time, the nearly 3-hour baking time is almost entirely hands-off. All that time in the oven is what allows the connective tissues to break down, resulting in that amazing tenderness.

I’ve also found that adding a couple of teaspoons of apple cider vinegar to the baking dish adds extra flavor and helps with the tenderness, too!

My Tips for a Perfect Result

Look for Evenly Sized Ribs: When you’re at the grocery store, try to find country-style ribs that are all a similar size so they cook evenly.

Don’t Rush the Cook Time: If you try to speed up the process, you’ll end up with tough, chewy pork. Just trust the low-and-slow method; it’s worth the wait.

Know When They’re Done: For perfectly tender ribs, the internal temperature should reach 190-205°F (88-96°C). This is much higher than the standard safe temp for pork, but it’s what gives you that incredible, fall-apart texture.

Let Them Rest: This is a non-negotiable step! Let your ribs rest for 10 minutes after you pull them out of the oven. This allows the juices to reabsorb, giving you the moistest, most flavorful meat.

Reheating Leftovers: Leftovers are amazing! You can store them in an airtight container for up to a week. To reheat, just add a bit of BBQ sauce on top to prevent them from drying out, and bake at 275°F for 20 minutes.

Are Baked Country Style Pork Ribs Tough?

Country-style ribs can be tough if they aren’t cooked right! If you try to grill them, they’ll be tough. However, if you use this slow cooking process, they’ll be fall off the bone (or blade) tender and delicious!  

Pork is safe to eat at 145°F (63°C), but for perfectly cooked, tender country-style pork ribs, the internal temperature should reach 190-205°F (88-96°C). This higher temperature, compared to leaner cuts like tenderloin, is what allows the connective tissues to break down, resulting in that amazing fall-apart tenderness.

Ingredients

  • 4 pounds boneless ribs
  • 1 ½-2 cups your favorite BBQ sauce

Homemade Dry Rub

  • 2 teaspoons chili powder
  • 1 tablespoon packed dark brown sugar
  • 1 tablespoon smoked paprika
  • 2 teaspoons cumin
  • 1 tsp garlic powder
  • 1 teaspoon onion powder
  • 1 tsp your favorite salt
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon black pepper

Instructions

  • Preheat oven temperature to 300 degrees.
  • Line a baking dish with foil for easy clean up!
  • Season ribs generously with dry rub on all sides!!
  • After seasoning, place ribs in a single layer on your foil lined baking dish.
  • Cover seasoned ribs tightly with foil and bake at 300°F in a preheated oven. Set timer for 2 hours cooking time.
  • After baking for 2 hours, uncover the ribs (be careful because the steam will be very hot) Then, DRAIN OFF the liquid from the baking dish. (Don't worry… these country style ribs look kind of gross and at this point… Don’t worry, next time they come out of the oven, they'll be tender and beautiful!)
  • Using a brush, apply a generous coat of your favorite BBQ sauce over all of the ribs.
  • Bake uncovered at 300 degrees F for another hour.
  • Turn oven to the broil setting, broil for 2 minutes to let BBQ sauce bubble and lightly brown. KEEP AN EYE ON THEM SO THEY DON'T BURN.
  • Brush with a little more of your favorite BBQ sauce.
  • After baking, Let ribs rest for 5-10 minutes, and enjoy! Serve with a green salad, rolls!

Notes

You can freeze leftovers in an airtight container for up to 3 months! To serve, just thaw in the fridge add bbq sauce on top to prevent drying out, and bake at 275 for 20 minutes!
Be super careful taking ribs out of the oven the first time! There is a lot of HOT liquid that can splash out of the pan and burn you. Plus the steam is super hot when opening the foil!
Applying BBQ sauce requires a brush. I love silicone basting brushes because they work awesome, last forever, and can go in the dishwasher without problems.
A good rule of thumb is to make 2 (two) ribs for each person… It’s always better to have more than not enough. 😉
Tenderness: If you’ve followed the instructions but your ribs are still a little tough, don’t worry! They just need a bit more time. Cover the dish tightly with foil and pop them back in the oven for another 20 minutes. This extra time will work wonders and get you that fall-apart tenderness.
Big Batch: If you’re making a large batch, prepare them 2 trays at a time. 
You will need to add fifteen minutes to the first baking time, so 2 hours and 15 minutes, then swap spots (one on top of the other) halfway through both baking times… This way they will cook evenly on both trays.
You can also make this recipe using a slow cooker too. Just remember to drain off extra liquid after the first 2 hours of cooking, then cover these bad boys with your favorite BBQ sauce and continue cooking on low for another 2 hours. Then easily serve these from your crock pot or slow cooker!
Serve with: These fall apart ribs are great with cranberry spinach salad, chopped broccoli salad and soft dinner rolls or soft sourdough rolls!

    Hi, I am going to make these ribs today but I need some clarification please. Sorry I I have made ribs one other time and they are my husband’s favorite so I want to do it right. The cook time states 4 hours but the instructions say 2 hour and then after bbq sauce 1 hour. Is the correct time 3 hours or is it supposed to be 2 hours after the bbq sauce is applied? Thank you and I can’t wait to try these.

      Hi Melissa! Sorry for the confusion! Yes, you are correct, the total time is 3 hours! You just cook them for one more hour after applying BBQ sauce… Hope you enjoy it! (Thanks for bringing this to my attention, I fixed the recipe card.)

      • The cook time in the recipe card now says 3 minutes. Also, in the write-up before the recipe card you say to preheat the oven to 300, then in the directions it says to bake at 275. In the recipe card it says 300 for both.
